Taking inspiration from the diverse tastes of its international guests and paying homage to the restaurant Rocky Mountain heritage, Flame Restaurant at Four Seasons Resort and Residences Vail unveils an innovatively reimagined menu this winter.
Jerome Arribas, General Manager at Four Seasons Resort Vail, notes, “In shaping Flame’s new culinary direction alongside Chef Simon and the team, our focus remained on honoring the palates of our global patrons while staying true to the essence of Colorado within Flame’s identity. The outcome is an invigorating fusion of traditional Colorado favorites and vibrant dishes infused with daring Latin flavors, showcasing the team’s remarkable creativity and skill.”
This revamped menu presents a sophisticated array of dishes, featuring standout offerings like the Sinaloa Spicy Aguachile, Crispy Apple and Watercress Salad, Portuguese Bacalao Potato Cakes, the “Après Pow for Two” Chipotle and Miso Baked Alaskan Cod, Taste of Colorado Rockies carving plate, and an exceptional caviar selection.
Executive Chef Simon Purvis expresses his pride, stating, “I’m immensely proud not only of this exceptional new menu but also of the incredible collaborative effort invested in crafting each dish. While every appetizer, main course, and side dish possesses its distinct flavor profile, they were all intentionally designed to complement each other harmoniously. Guests’ greatest challenge will be selecting from the array of enticing options or, perhaps more importantly, choosing the perfect wine pairing.”
The relaunch of Flame’s fundamental menu coincides with the introduction of the Resort’s inaugural Winter Wine Series. This series comprises curated wine dinners hosted by distinguished sommeliers and vintners. Collaborating with esteemed names like Pinea Winery, Daou Family Estates, Fisher Vineyards, and Silver Oak Cellars, Flame will present five-course meals complemented by tastings. Guests will have the opportunity to glean insights from leading winemakers about exclusive vintages and groundbreaking production techniques from vineyards in California and Spain.
